Food and Beverage Cost Controller

We’re on the lookout for someone bright, curious and commercially sharp to join our FinTech team, a Food & Beverage Cost Controller who’ll help keep Dishoom running beautifully behind the scenes.

This is a role for someone who loves detail and precision, someone who knows that when the numbers make sense, everything else can flourish. You’ll be the key link between Finance, Operations and Supply Chain, helping us understand where every penny goes, how every dish adds up, and how we can keep delivering first-class hospitality in a sustainable way.

As the superuser of our procurement system (Procure Wizard), you’ll make sure our processes are slick, our data is clear, and our insights are spot-on, supporting our cafés, kitchens and ecommerce teams to perform at their very best.


About the Role:

The Food & Beverage Cost Controller plays a key role in maintaining financial discipline, cost transparency, and operational efficiency across Dishoom’s food, drink and ecommerce channels. You’ll ensure the business has accurate, timely and actionable insights into cost performance, supplier management and procurement efficiency, shaping how we make decisions and how we grow.

Key Responsibilities:

  • Take full ownership of our purchasing system (Procure Wizard) — maintaining set-up, products, recipes and templates, and ensuring accuracy and efficiency across all sites.
  • Manage supplier pricing, relationships and performance, monitoring order patterns to ensure compliance and best value.
  • Lead food and drink cost-of-sales reporting, budgeting and analysis — tracking inflation, sales mix and GP performance to drive visibility and improvement.
  • Support our central production kitchen to enhance cost efficiency and create clear, actionable insight for the wider business.
  • Work closely with our ecommerce team on forecasting, pricing, product launches and NPD — ensuring strong margin management and clear financial oversight.
  • Produce and improve weekly reporting (including our beloved Jantri) and partner with the data team to ensure accuracy and meaningful insights.
  • Help prepare tenders and support sourcing for new openings or supplier reviews, contributing to best-buy practice across the business.
  • Deliver training and guidance to teams using Procure Wizard, embedding strong habits and consistency across Dishoom.
  • Lend your support to ad hoc projects, analysis and improvements across Finance, Supply Chain and Operations whenever needed.


About You:

You’ll bring strong analytical skills, commercial curiosity and a love for hospitality — someone who can see both the detail and the bigger picture. You’ll be the calm in the numbers, the person who keeps things moving and makes sure decisions are based on solid insight.

  • Solid experience with Procure Wizard (ideally as a Superuser), with a strong understanding of purchasing systems and best practice.
  • Advanced Excel skills, with the ability to spot trends, solve problems and communicate findings clearly.
  • Confident presenting financial information to both finance and non-finance teams.
  • Experience in the hospitality industry (or a genuine interest in it), with a good understanding of key KPIs and cost structures.
  • Strong systems knowledge, ideally including Aloha and other POS or procurement tools.
  • Organised and proactive, thriving in a fast-paced environment where priorities can shift and new challenges appear.
  • Naturally collaborative and supportive, helping teams improve performance through thoughtful analysis, insight and communication.

About Dishoom:

Dishoom and Permit Room are managed by a team of Babus* led by co-founders Shamil and Kavi Thakrar. The first Dishoom opened in Covent Garden in 2010, and Dishoom now has cafés in London, Edinburgh, Manchester, Birmingham, Brighton, Cambridge and Oxford. It also has delivery kitchens and an online store. Shamil, Kavi and Naved Nasir published their first book, “Dishoom: From Bombay with Love” in 2019.
