OPERATIONAL TRAINING LEAD

ShoreditchFull timeCompetitive Salary
HR/ Recruitment/ Training

Dishoom is growing - with more sites opening in the UK, our first in New York and hundreds more people joining us every year. Every one of them needs to learn how to give our guests a wonderful time.

We’re looking for an Operational Training Lead to own how we train our team (we’re not sure if this is right job title just yet). Reporting to our Head of Learning, you’ll lead our operations training team and site trainers, set the standards, keep everyone safe and trained, and build the training, tools and people that help everyone get brilliant at what they do.

You’ll know great service inside out, ideally from years in hospitality, and how a busy operation really works: what makes a great host, how a pass sounds when it’s working, and what a GM does before service that changes the night. You’ll turn that into training that works at scale, across every site and every new opening.

We’ve always been good at growing our own - more than 80% of our GMs and Head Chefs joined us in other roles and grew into the job here. Most of that starts with someone good teaching the person next to them. We want to make that teaching better, more consistent and ready for the sites we haven’t opened yet.

WHAT YOU’LL DO (WITH YOUR TEAM)

  • Own operational training for every role, rooted in Seva: taking care of our team the way we want them to take care of our guests
  • Set clear, practical standards so everyone knows what great looks like, spending time in sites with Ops to understand challenges and find training that works
  • Get newbies confident quickly, balancing pace with knowledge
  • Make sure everyone is trained and confident on what keeps our guests and team safe, and own training completion and compliance across our sites, including allergens, risk training and annual requirements
  • Make learning stick, with training that’s short, visual and easy to use mid-shift, whatever your language
  • Build the on-shift training and resources that help people progress, working alongside our management programmes
  • Bring one consistent approach to induction and training across Dishoom and Permit Room
  • Lead training for new openings in the UK, and support our team opening in New York
  • Lead and develop our operations training team and site trainers, owning the content that keeps training current (menu updates, workbooks, welcome wall) with the Learning Coordinator
  • Use data to see where training is and isn’t landing in sites, measure the impact, and review regularly with the Head of Learning what to update, combine or remove
  • Make sure our learning platform works for our sites, and keep pushing to make it better

WHO YOU ARE

  • You’re obsessed with impact, always looking for better ways to help people learn and seeing it show up on shift
  • You’ve spent years in great restaurants and still get a buzz from a busy service
  • You know what makes great service and can turn it into simple, visual training that works mid-shift
  • You’ve led teams on the floor or in the kitchen and trained plenty of people along the way
  • You’ve opened restaurants and know what it takes to get a new team ready
  • You’re as at home on the floor as at a desk, and people trust you because you know the job
  • You hold high standards without making anyone afraid to ask
  • You’re organised and calm under pressure, keeping lots of plates spinning across sites and openings
  • You bring energy and initiative, and love making change happen across sites
  • You get people excited about their role, and can bring people with you
  • You’re comfortable with tech and AI, and use them to make training easier to get to

Salary to be discussed

We’re more interested in finding the right person than ticking every box. Maybe your skills are brilliant, but don’t tick every single box or perhaps the salary might need a little tweak. If this role feels like a great fit for you (or almost does!), we’d love to hear from you.

At Dishoom - everyone is welcome. We are committed to having an inclusive and diverse workplace and strongly encourage people from all backgrounds, identities, and experiences to apply for roles with us.
